Pancake Batter Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, large eggs, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet mixture into the dry mixture and stir gently until just combined. Do not overmix; a few lumps are okay.

    Melt Butter

    In a small saucepan, melt the unsalted butter and then fold it into the pancake batter until incorporated.

    Prepare Cinnamon Mixture

    In a small bowl, mix the brown sugar and ground cinnamon together until well blended. Melt the unsalted butter and stir it into the cinnamon-sugar mixture.

Vanilla Cheesecake Topping Preparation

    Mix Cheesecake Ingredients

    In a medium bowl, beat the cream cheese until creamy. Add the powdered sugar and vanilla extract, and mix until smooth. Gradually add the heavy cream and continue to beat until the mixture is light and fluffy.

Cooking Pancakes

    Heat Griddle

    Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

    Cook Pancakes

    Pour about 1/4 cup of pancake batter onto the griddle. Before the batter sets, drizzle a small amount of the cinnamon swirl mixture in a spiral pattern on top of the batter.

    Flip Pancakes

    Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Carefully flip the pancake and cook for an additional 1-2 minutes until golden brown.

    Continue to cook the remaining batter, greasing the griddle as necessary.

Serving

    Plate and Serve

    Stack the pancakes on a plate, drizzle with maple syrup, and top with a generous dollop of vanilla cheesecake topping. Serve immediately.
