    Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and place them in a bowl.

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in cold sparkling water until the batter is smooth and thick.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Coat the Onion Rings

    Dip each onion ring into the batter, ensuring it is completely coated.

    Fry the Onion Rings

    Carefully place the battered onion rings into the hot oil, frying in batches until golden brown and crispy, approximately 2-3 minutes per side. Remove and drain on paper towels.

Ranch Dressing

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, buttermilk, dried dill, garlic powder, onion powder, salt, pepper, fresh parsley, and lemon juice.

    Whisk the mixture until all ingredients are well incorporated and smooth. Refrigerate until ready to serve.

Jalapeño Aioli

    Combine Ingredients

    In a bowl, mix together mayonnaise, minced jalapeño, minced garlic, lime juice, salt, and pepper.

    Stir until smooth and well combined. Adjust seasoning to taste. Refrigerate until ready to serve.
