    Fry the Eggs

    In a non-stick skillet over medium heat, crack the 2 eggs and fry until the whites are set and the yolks are cooked to your desired doneness, about 3-4 minutes for sunny side up.

    Cook the Chorizo Patty

    In the same skillet, add the chorizo patty and cook for about 3-4 minutes on each side until browned and cooked through.

    Toast the English Muffin

    While the eggs and chorizo are cooking, split the English muffin and toast it until golden brown in a toaster or on a skillet.

    Assemble the Dish

    On the bottom half of the toasted English muffin, place the chorizo patty, followed by the fried eggs, a slice of smoked gouda, and top with jalapeño aioli. Close with the other half of the muffin.

    Prepare the Rosemary Potatoes

    Wash and dice the 2 medium potatoes into small cubes. In a bowl, toss the diced potatoes with olive oil, chopped fresh rosemary, salt, and black pepper.
