Begin by heating the cooking oil in a deep fryer or a large, heavy-bottomed pot to 350°F (175°C).

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder.

Whisk in the beer until the batter is smooth and well combined.

Dip each pickle slice into the batter, allowing excess to drip off.

Carefully place the battered pickles into the hot oil, frying in batches to avoid overcrowding.

Fry for about 3-4 minutes or until golden brown and crispy.

Remove the fried pickles with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.

In a bowl, whisk together the mayonnaise and buttermilk until smooth.

Add in the dried dill, garlic powder, onion powder, salt, and black pepper.

Mix until well combined, and adjust seasoning to taste. Refrigerate until ready to serve.
Jalapeño Aioli
