For the Fish

Method

Preparing the Chips

  1. 1

    Peel and Cut Potatoes

Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crispier fries.

  3. 3

    Dry the Potatoes

Drain the potatoes and pat them dry with paper towels to remove excess moisture.

  4. 4

    Preheat Oil

In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C).

  5. 5

    First Fry

Fry the potatoes in batches for about 3-4 minutes until they are softened but not browned. Remove and drain on paper towels.

  6. 6

    Increase Oil Temperature

Increase the oil temperature to 375°F (190°C) for the second fry.

  7. 7

    Second Fry

Fry the potatoes again in batches for 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels, then season with salt.

Preparing the Fish

  1. 8

    Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Whisk together until well combined.

  2. 9

    Add Sparkling Water

Slowly pour in the cold sparkling water while whisking until the batter is smooth and slightly thick.

  3. 10

    Preheat Oil for Fish

In a separate large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

  4. 11

    Coat the Fish

Dip each fish fillet into the batter, coating it evenly.

  5. 12

    Fry the Fish

Carefully place the battered fish fillets into the hot oil and fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serving

  1. 13

    Plate the Dish

Serve the fish and chips hot, garnished with lemon wedges and tartar sauce if desired.
