Method

Preparation of Fries

    Cut the Potatoes

    Peel the potatoes and cut them into thick fries, about 1/4 to 1/2 inch thick.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Fries

    After soaking, drain and dry the fries thoroughly with a clean kitchen towel.

Preparation of Tartar Sauce

    Mix the Ingredients

    In a bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and Dijon mustard.

    Season the Sauce

    Add salt and black pepper to taste, mixing well. Refrigerate until ready to serve.

Preparation of Fish

    Make the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Add Beer

    Gradually pour in the beer, whisking until you have a smooth batter.

    Heat the Oil

    In a large deep pot or fryer, heat vegetable oil to 350°F (175°C).

    Dust the Cod

    Pat the cod fillets dry with paper towels. Dust lightly with flour to help the batter stick.

    Fry the Fish

    Dip each cod fillet into the batter, allowing excess to drip off, and carefully place in the hot oil. Fry for about 4-5 minutes or until golden brown and crispy.

    Drain and Dust

    Remove the fried cod from the oil and place on paper towels to drain excess oil. Dust with malt powder immediately.

    Fry the Fries

    In the same oil used for the fish, fry the dried potatoes in batches for about 5-7 minutes or until golden and crispy.

    Season the Fries

    Remove fries from the oil, drain on paper towels, and season with salt while still hot.

Serving

    Plate the Fish and Chips

    Serve the fried cod alongside the crispy fries on a plate.

    Garnish

    Add lemon wedges on the side and serve with homemade tartar sauce.
