Preparing the Tartar Sauce

Make the Tartar Sauce
In a bowl, mix together the mayonnaise, diced pickles, lemon juice, capers, and salt to taste. Stir well and refrigerate until ready to serve.

Cut the Potatoes
Peel and cut the potatoes into thin strips to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and dry them thoroughly.

Make the Batter
In a bowl, combine the all-purpose flour, baking powder, and salt. Slowly whisk in the beer until smooth and well combined.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Batter and Fry the Cod
Dip each cod fillet into the batter, ensuring it is fully coated. Carefully place the battered cod into the hot oil and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and let drain on paper towels. Dust with malt powder immediately after frying.

Serve the fish alongside the fries on a plate. Add lemon wedges and a side of tartar sauce for dipping.
