Tomato Sauce

Method

Prepare Tomato Sauce

    Sauté Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Pour in the canned crushed tomatoes and add oregano, salt, black pepper, and red pepper flakes. Stir well to combine.

    Simmer Sauce

    Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

Cook Eggs and Prepare Naan

    Prepare Naan Crostini

    While the sauce is simmering, preheat your oven to 400°F (200°C). Cut the naan bread into triangles and place them on a baking sheet. Bake for 5-7 minutes until crispy.

    Add Eggs to Sauce

    Once the sauce has thickened, gently crack the eggs into the sauce, spacing them evenly. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.

    Add Cheese and Basil

    Sprinkle torn fresh mozzarella and grated Parmesan over the eggs in the skillet. Cover again and cook for an additional 2-3 minutes until the cheese is melted. Remove from heat and garnish with fresh basil leaves.
