    Prepare the Quinoa

    Rinse 1 cup of quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce the heat, cover, and let simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes.

    Cook the Chicken

    While the quinoa is cooking, season the 2 pieces of chicken breast with garlic powder, paprika, salt, and black pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 7-8 minutes on each side until fully cooked and golden brown. Remove from the skillet and let them rest before slicing.

    Cook the Shrimp

    In the same skillet, add another tablespoon of olive oil. Add the 200 grams of shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the diced bell peppers and sliced zucchini. Sauté for about 5 minutes until they start to soften. Then add the 2 cups of spinach and cook until wilted, about 2 minutes.

    Combine and Serve

    In a large bowl, combine the cooked quinoa, sautéed vegetables, sliced chicken, and cooked shrimp. Toss everything together gently until well mixed. Adjust seasoning with salt and pepper if needed. Serve warm.
