Crust

Method

Crust Preparation

  1. 1

    Prepare the crust

In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with the butter.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup to help pack it down tightly.

  3. 3

    Bake the crust

Preheat the oven to 350°F (175°C) and bake the crust for 8-10 minutes, or until lightly golden. Remove from oven and allow to cool.

Filling Preparation

  1. 4

    Mix the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

  2. 5

    Add sugar and sour cream

Gradually add the granulated sugar and continue to beat until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

  3. 6

    Incorporate eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

  4. 7

    Pour filling into crust

Pour the cheesecake filling into the cooled crust, spreading it evenly.

Baking the Cheesecake

  1. 8

    Bake the cheesecake

Bake the cheesecake in the preheated oven at 325°F (160°C) for 55-60 minutes, or until the center is set and only slightly jiggly.

  2. 9

    Cool the cheesecake

Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracks.

  3. 10

    Chill

Remove the cheesecake from the oven and refrigerate for at least 4 hours, or preferably overnight, before serving.

Serving

  1. 11

    Add toppings

Before serving, top the cheesecake with fresh berries and a dusting of powdered sugar if desired.

  2. 12

    Slice and enjoy

Slice the cheesecake using a sharp knife and serve chilled.
