Preheat Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Cut in Butter
Add the unsalted butter into the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk
Pour in the milk and stir just until combined. Do not overmix.

Shape Biscuits
Turn the dough onto a floured surface and gently knead it 2-3 times. Pat it into a 1-inch thick round, and cut out biscuits using a biscuit cutter or a glass.

Bake
Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
Gravy Directions

Cook Chorizo
In a large skillet over medium heat, add the chorizo sausage. Cook until browned and fully cooked, breaking it up with a spoon as it cooks, about 5-7 minutes.

Add Flour
Sprinkle 1 tablespoon of all-purpose flour over the cooked chorizo and stir to combine. Cook for about 1 minute to remove the raw flour taste.

Add Milk
Gradually pour in the milk while stirring to avoid lumps. Continue to cook, stirring frequently, until the gravy thickens, about 3-5 minutes.

Add Cheese and Spices
Stir in the smoked gouda cheese, smoked paprika, black pepper, and salt to taste. Cook until the cheese is melted and the gravy is smooth.
