Veal Saltimbocca Recipe

Preparation

    Prepare the Veal

    Pound the veal cutlets to about 1/4 inch thickness using a meat mallet. Season lightly with salt and black pepper on both sides.

    Assemble the Cutlets

    Place a slice of prosciutto on each veal cutlet. Add 2-3 sage leaves on top of the prosciutto. If desired, secure with toothpicks.

    Prepare the Vegetables

    Finely chop the shallots and slice the mushrooms. Set aside.

    Prepare the Spinach

    Wash the spinach thoroughly and set aside for wilting later.

Cooking

    Cook the Veal

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the veal cutlets, prosciutto side down, and cook for about 3-4 minutes until golden brown. Flip and cook for an additional 3 minutes. Remove the veal from the skillet and set aside.

    Sauté Shallots and Mushrooms

    In the same skillet, add 50 grams of butter. Once melted, add the chopped shallots and sauté until translucent. Then add the sliced mushrooms and cook until they are soft and browned.

    Add Cheese

    Reduce the heat to low and place the cooked veal back in the skillet. Top each cutlet with fontina cheese. Cover the skillet to let the cheese melt, about 2-3 minutes.

    Wilt the Spinach

    In a separate pan, add a small amount of olive oil and heat over medium. Add the spinach and sauté until just wilted, about 2 minutes. Season with salt and pepper to taste.

    Serve

    Plate the wilted spinach and place the veal cutlets on top. Spoon the sautéed mushrooms and shallots over the veal. Serve warm.
