Shrimp Scampi Recipe
Shrimp sautéed with garlic, fire roasted tomatoes, capers and artichokes in a white wine lemon sauce over linguini.

Cook the Linguini
In a large pot, bring salted water to a boil. Add the linguini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté the Shrimp
In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the shrimp and cook for 2-3 minutes until they turn pink and opaque.

Add Vegetables
Stir in the fire roasted tomatoes, artichoke hearts, and capers. Cook for another 2-3 minutes until heated through and well combined.

Deglaze the Pan
Pour in the white wine and lemon juice. Bring to a simmer and let it cook for 4-5 minutes until the sauce reduces slightly.

Combine with Pasta
Add the drained linguini to the skillet. Toss to combine, adding reserved pasta water a little at a time if the sauce is too thick. Season with salt, black pepper, and red pepper flakes to taste.

Garnish
Once everything is well combined and heated through, remove from heat. Garnish with fresh parsley before serving.
