Preparing the Salad

Prepare the Romaine
Wash the hearts of romaine lettuce thoroughly under cold water. Pat them dry with a clean kitchen towel or use a salad spinner to remove excess water.

Chop the Lettuce
Chop the romaine hearts into bite-sized pieces and place them in a large salad bowl.

Add Croutons and Cheese
Sprinkle the rustic croutons and shaved Padano Parmesan over the chopped romaine in the salad bowl.
Making the Caesar Dressing

Prepare Ingredients
Peel and finely mince the garlic cloves. Chop the anchovy fillets into small pieces.

Combine Dressing Ingredients
In a medium bowl, combine the minced garlic, chopped anchovies, Dijon mustard, Worcestershire sauce, and lemon juice. Mix well until smooth.

Slowly drizzle the olive oil into the mixture while whisking continuously until the dressing is emulsified. Season with salt and black pepper to taste.
