Salad Preparation

Prepare the Vegetables
Wash and dry the mixed greens thoroughly. Chop into bite-sized pieces and place in a large salad bowl.

Chop Cucumbers and Onions
Peel the cucumber, slice it in half lengthwise, and remove the seeds. Dice the cucumber into small pieces. Peel and dice the sweet onion into small pieces. Add both to the salad bowl.

Add Roasted Red Peppers and Olives
Drain and chop the roasted red peppers into small pieces. Pit and slice the kalamata olives. Add both to the salad bowl.

Add Ceci Beans and Marinated Tomatoes
Rinse and drain the ceci beans (chickpeas). If using marinated tomatoes, chop them into smaller pieces if necessary. Add both to the salad bowl.

Add Blue Cheese Crumbles
Sprinkle the blue cheese crumbles over the salad.
Vinaigrette Preparation

Make the Vinaigrette
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, and minced garlic. Season with salt and black pepper to taste.

Combine and Toss
Pour the vinaigrette over the salad ingredients in the large bowl. Toss gently to combine everything evenly, ensuring that the greens and toppings are well coated with the vinaigrette.
