Base Preparation

    Step 1: Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

    Step 2: Whisk the Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Step 3: Temper the Egg Mixture

    Gradually pour about a cup of the hot milk mixture into the egg yolk mixture while whisking constantly to temper the eggs. This prevents them from scrambling.

    Step 4: Combine and Thicken

    Pour the tempered egg mixture back into the saucepan with the remaining milk and cream. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Flavoring and Chilling

    Depending on your chosen flavor variation, add the cocoa powder, fresh berries, or chopped pistachios to the cooled base mixture and stir well to combine.

    Cover the mixture and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.

Churning

    Step 8: Churn the Mixture

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Step 9: Freeze the Gelato

    Transfer the churned gelato to an airtight container and freeze for at least 4 hours to harden before serving.
