Prepare the Vegetables
Wash the fresh spinach thoroughly under cold water. Drain and chop coarsely. Drain the canned artichoke hearts and chop roughly. Dice the onion into small pieces. Clean the mushrooms with a damp cloth and slice. Drain and chop the roasted red peppers. If using whole olives, slice them into rounds.

Sauté the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onions and sauté for about 2-3 minutes until they become translucent. Add sliced mushrooms and cook for another 3-4 minutes. Then, add the chopped spinach, artichokes, roasted red peppers, and olives. Sauté for an additional 3-5 minutes, stirring occasionally until the spinach wilts and the mixture is heated through. Season with salt and pepper to taste.

Assemble the Pizza
Preheat your oven to 475°F (245°C). Spread the pizza sauce evenly over your pizza dough. Layer the sautéed vegetable mixture over the sauce, spreading evenly. Sprinkle shredded mozzarella cheese generously over the top.

Bake the Pizza
Place the assembled pizza in the preheated oven and bake for 12-15 minutes, or until the cheese is bubbly and golden brown. Keep an eye on it to prevent burning.

Cool and Serve
Once baked, remove the pizza from the oven and let it cool for a few minutes. Slice into wedges and serve while hot.
