Main Ingredients

Demi-Glaze

Method

Preparation

  1. 1

    Prepare the Ingredients

Clean the lobster tail, remove the shell, and butterfly it. Clean and slice the Portobello mushrooms. Season the filet mignon with salt and black pepper.

  2. 2

    Make the Demi-Glaze

In a saucepan, heat the olive oil over medium heat. Add the shallots and sauté until translucent. Pour in the Barolo wine and bring to a simmer, reducing it by half. Then, add the beef stock and continue to simmer until the sauce thickens. Stir in butter and season with salt and pepper.

Cooking

  1. 3

    Sear the Filet Mignon

Heat a skillet over high heat. Add a little olive oil and sear the filet mignon for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let it rest.

  2. 4

    Cook the Lobster Tail

In the same skillet, reduce the heat to medium. Add the lobster tail, cooking for about 3-4 minutes per side until the meat is opaque and cooked through.

  3. 5

    Sauté the Mushrooms

In a separate pan, add a bit of butter and sauté the sliced Portobello mushrooms for about 5 minutes until they are tender and browned.

Plating

  1. 6

    Assemble the Dish

On a plate, place the filet mignon at the center, add the lobster tail on top or beside it, and arrange the sautéed Portobello mushrooms around. Drizzle the Barolo demi-glaze over the meat and mushrooms before serving.
