Combine Milk and Cream
In a large saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Add Lemon Juice
Once the milk and cream mixture is hot, remove it from the heat. Slowly add the lemon juice while gently stirring. You should see the curds begin to separate from the whey.

Stir in the salt to enhance the flavor of the cheese. Let the mixture sit for about 10 minutes, allowing the curds to form.

Strain the Curds
Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curds and whey into the colander. Allow the whey to drain for about 30 minutes.

Rinse and Squeeze
Once drained, rinse the curds under cold water to remove any remaining whey. Gather the cheesecloth and gently squeeze out excess moisture.

If desired, mix in fresh herbs, garlic powder, and black pepper to taste. Combine thoroughly.
