Method

Preparation of Salmon

    Soak Cedar Plank

    Soak the cedar plank in water for at least 1 hour to prevent it from burning on the grill.

    Prepare the Salmon

    Season the Atlantic salmon filets with salt and black pepper on both sides. Set aside.

Roasted Pepper and Garlic Madeira Sauce

    Prepare the Sauce

    In a blender, combine the roasted red bell peppers, garlic, Madeira wine, olive oil, salt, and black pepper. Blend until smooth.

    Heat the Sauce

    Pour the blended mixture into a saucepan and heat over medium heat for about 5-7 minutes, stirring occasionally. Add chopped fresh parsley before serving.

Grilling Asparagus and Salmon

    Prepare the Asparagus

    Trim the woody ends off the asparagus and toss with olive oil, salt, and black pepper.

    Preheat the Grill

    Preheat the grill to medium-high heat.

    Grill the Asparagus

    Place the asparagus directly on the grill and cook for about 5-7 minutes, turning occasionally until tender and slightly charred.

    Grill the Salmon

    Place the soaked cedar plank on the grill and close the lid. After about 3-4 minutes, place the salmon filets on the cedar plank. Close the lid and grill for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Plate the grilled salmon filets topped with the roasted pepper and garlic Madeira sauce, accompanied by the grilled asparagus and blue crab meat.
