Dough Preparation

Activate Yeast
In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Create a well in the center and add the frothy yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Filling
In a mixing bowl, combine ricotta cheese, mozzarella cheese, diced ham, pepperoni slices, Italian seasoning, and black pepper. Mix well until all ingredients are evenly distributed.

Preheat Oven
Preheat your oven to 425°F (220°C).

Shape Calzone
Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 10 inches in diameter.

Fill Calzone
Spoon half of the filling mixture onto one half of each dough circle, leaving a border around the edge. Fold the other half over and crimp the edges to seal.

Prepare for Baking
Brush the top of each calzone with the beaten egg and sprinkle with grated Parmesan cheese.

Place the calzones on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
