Prepare the Chicken Tenders

Bread the Chicken
Dip each chicken tender first in the flour, then in the egg, and finally coat it in breadcrumbs. Set aside on a plate.

Fry the Chicken
In a large skillet, heat oil over medium heat. Once the oil is hot, carefully add the breaded chicken tenders and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Chop the Vegetables
While the chicken is frying, chop the cucumber into thin slices, halve the cherry tomatoes, and thinly slice the red onion.

Cook the Bacon
In a separate skillet, cook the thick-cut bacon over medium heat until crispy. Remove and let drain on paper towels before chopping into bite-sized pieces.

Assemble the Salad
In a large bowl, combine the mixed greens, chopped cucumber, cherry tomatoes, red onion, chopped bacon, and Colby cheese.
