Candied Pecans

Poppyseed Dressing

Method

Preparing the Salad

  1. 1

    Prepare the Salad Base

In a large mixing bowl, combine the spring mix, sliced strawberries, blueberries, diced pineapple, and thinly sliced red onion. Toss gently to combine.

Making the Candied Pecans

  1. 2

    Candy the Pecans

In a saucepan over medium heat, melt the butter. Add the chopped pecans, granulated sugar, and salt. Stir continuously until the sugar has melted and the pecans are coated, about 5-7 minutes. Remove from heat and transfer to a parchment-lined baking sheet to cool.

Preparing the Poppyseed Dressing

  1. 3

    Mix the Dressing

In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, and poppy seeds until smooth and well combined.

Final Assembly

  1. 4

    Combine and Serve

Once the candied pecans have cooled, add them to the salad bowl. Drizzle the poppyseed dressing over the salad and toss gently to coat all ingredients. Serve immediately.
