Ensure that the white cheddar cheese curds are kept cold until you are ready to batter and fry them.
Make the Batter

In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well combined.

Gradually add the cold water to the dry ingredients, whisking until you have a smooth batter. The batter should be thick enough to coat the cheese curds.
Prepare the Ranch Dipping Sauce

In a medium bowl, combine the mayonnaise, buttermilk, dried dill weed, garlic powder, onion powder, salt, and black pepper. Whisk until smooth and well combined. Refrigerate until ready to serve.
Fry the Cheese Curd

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Working in batches, dip the cold cheese curds into the batter, ensuring they are fully coated.

Carefully drop the battered cheese curds into the hot oil, frying them for about 3-4 minutes or until they are golden brown and floating. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
