Prepare Mushrooms

    Clean the Mushrooms

    Gently wipe the Portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and sprinkle the caps with salt.

Make Batter

    Combine Dry Ingredients

    In a large bowl, sift together the flour, cornstarch, baking powder, garlic powder, onion powder, and black pepper until well mixed.

    Add Wet Ingredients

    In a separate bowl, whisk together the cold water and egg. Gradually add this mixture to the dry ingredients, stirring until the batter is smooth and lump-free.

Fry Mushrooms

    Heat Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter and Fry

    Dip each mushroom cap into the batter, ensuring it's fully coated. Carefully place the coated mushrooms into the hot oil, a few at a time, and fry for 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

Make Ranch Dipping Sauce

    Mix Ingredients

    In a bowl, combine mayonnaise, sour cream, dried dill, garlic powder, onion powder, salt, black pepper, and lemon juice. Mix well until smooth and creamy.
