Beef Preparation

    Slice the Ribeye

    Using a sharp knife, thinly slice the beef ribeye against the grain into thin strips.

    Cook the Beef

    In a large skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the sliced ribeye and cook for about 3-4 minutes, or until browned and cooked to your desired doneness. Remove from skillet and set aside.

Cheese Sauce Preparation

    Make the Roux

    In the same skillet, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1-2 minutes until lightly golden.

    Add Milk and Cheese

    Gradually whisk in 1 cup of milk, stirring constantly until the mixture thickens. Add cream cheese and shredded white cheddar cheese, stirring until melted and smooth. Season with salt and black pepper.

Vegetable Preparation

    Grill the Vegetables

    In the same skillet, add the sliced bell peppers and onion. Sauté over medium heat until they are soft and slightly caramelized, about 5-7 minutes.

Assembling the Sandwich

    Prepare the Roll

    Slice the Amoroso rolls in half, and lightly toast them if desired.

    Build the Sandwich

    Layer the cooked ribeye onto the bottom half of the roll, followed by the sautéed peppers and onions. Drizzle generously with the cheese sauce, then top with the other half of the roll.

    Serve

    Cut the sandwich in half if desired, and serve hot with your choice of side.
