Fries Preparation

    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips about 1/4 inch thick to create fries.

    Soaking the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch.

    Drying the Fries

    After soaking, drain the fries and pat them dry with a clean kitchen towel.

    Frying the Fries

    In a large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Cheese Sauce Preparation

    In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes until bubbly.

    Gradually whisk in the milk and continue stirring until the mixture thickens.

    Lower the heat and add the cheddar cheese. Stir until melted and smooth. Season with salt and black pepper.

    In a skillet, cook the thick-cut bacon until crispy. Remove and chop into bite-sized pieces.

    On a large plate or platter, layer the fries, followed by the cheese sauce, chopped bacon, diced tomatoes, jalapenos, and scallions. Finish with a generous dollop of 710 sauce sour cream.
