Fish Preparation

    Season the Fish

    Rub the mahi mahi fillets with olive oil, salt, and Thai seasoning blend on both sides.

    Sear the Fish

    Heat a skillet over medium-high heat. Once hot, add the seasoned fish and sear for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Mango Salsa Preparation

    Combine Salsa Ingredients

    In a mixing bowl, combine the diced mango, red onion, chopped cilantro, lime juice, and minced jalapeño (if using). Mix well and set aside to let the flavors meld.

    Warm the Tortillas

    In a dry skillet or microwave, warm the corn or flour tortillas until pliable.

    Assemble the Tacos

    Place a portion of seared mahi mahi on each tortilla. Top with a generous spoonful of mango salsa, a drizzle of sriracha, and a dollop of sour cream.
