Method

Brisket Preparation

  1. 1

    Prepare the Brisket

Preheat your oven to 300°F (150°C).

  2. 2

    Season the Brisket

In a small bowl, mix together smoked paprika, brown sugar, black pepper, and salt. Rub this mixture all over the brisket.

  3. 3

    Sear the Brisket

In a large skillet, heat a little oil over medium-high heat. Sear the brisket on all sides until browned, about 3-4 minutes per side.

  4. 4

    Add Aromatics

Slice the onion and mince the garlic. Place the brisket in a roasting pan and add the onion and garlic around it.

  5. 5

    Braised Cooking

Pour the beef broth into the pan. Cover tightly with aluminum foil and braise in the oven for about 4 hours, or until the brisket is tender.

  6. 6

    Shred the Brisket

Remove the brisket from the oven and let it rest for 15 minutes. Then shred it using two forks.

  7. 7

    Mix with BBQ Sauce

Mix the shredded brisket with BBQ sauce until well-coated.

Slaw Preparation

  1. 8

    Prepare the Slaw

In a large bowl, shred the green cabbage and grate the carrots.

  2. 9

    Make the Dressing

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

  3. 10

    Combine Slaw

Pour the dressing over the cabbage and carrots. Toss until well mixed and refrigerate for at least 30 minutes.

Assembly

  1. 11

    Toast the Buns

Cut the pretzel buns in half and toast them lightly on a skillet or in a toaster.

  2. 12

    Assemble the Sandwich

Place a generous amount of the BBQ brisket on the bottom half of each toasted bun, top with gouda cheese, and add a scoop of slaw before placing the top bun on.
