Prepare the Vegetables
Preheat the oven to 425°F (220°C). Wash and cut the cauliflower, carrots, and broccoli into wing-sized pieces.

Make the Batter
In a bowl, whisk together the all-purpose flour, eggs, garlic powder, onion powder, paprika, salt, and black pepper until smooth.

Coat the Veggies
Dip each vegetable piece into the batter, making sure it's fully coated. Let the excess batter drip off.

Breadcrumb Coating
Roll each battered vegetable piece in panko breadcrumbs until fully coated.

Bake the Wings
Place the coated vegetable wings on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for 20-25 minutes, flipping halfway through, until golden and crispy.

Serve
Remove from the oven and let cool slightly. Serve with hot sauce on the side if desired.
