Blackberry-Basil Syrup
Cocktail
Method
Blackberry-Basil Syrup
Make the syrup
Combine 1/2 cup water and 1/2 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture just comes to a simmer.
Add the 1 cup fresh blackberries to the saucepan and gently crush them with the back of a spoon or a muddler to release juices. Simmer for 4–5 minutes, stirring occasionally, until berries break down and mixture slightly thickens.
Remove the pan from heat and stir in 1/2 cup packed fresh basil leaves and 1 tablespoon fresh lemon juice. Let steep for 10 minutes off the heat so basil infuses but does not turn bitter.
Strain the mixture through a fine-mesh sieve into a heatproof bowl or jar, pressing on solids to extract liquid. Discard solids or reserve a spoonful for garnish. Allow syrup to cool to room temperature, then refrigerate until chilled. Makes about 3/4 to 1 cup syrup.
Cocktail Assembly
Fill a cocktail shaker halfway with ice (about 1 cup).
Add 2 oz vodka (or gin), 1 oz chilled blackberry-basil syrup, and 1/2 oz fresh lime juice to the shaker.
Shake vigorously for 10–12 seconds until the outside of the shaker is well chilled.
Fill a rocks glass or highball with fresh ice. Strain the shaken mixture into the glass.
Top with 2 oz club soda and gently stir once to combine.
Garnish with a sprig of basil and 2 fresh blackberries (skewer if desired). Serve immediately.
