Method

Batter preparation and onion rings

    Prep onion rings

    Trim and peel the large onion, cut into about 1/2-inch thick rings, and separate into individual rings. Reserve a few rings for frying if desired.

    Make batter

    In a large bowl, whisk together flour, cornstarch, baking powder, paprika, garlic powder, salt, and pepper.

    Add beer to batter

    Pour in cold beer gradually, whisking until the batter is smooth and lump-free. Let rest 10 minutes.

    Heat oil

    Fill a heavy-bottomed pot or fryer with oil to a depth of about 2 inches and heat to 360-375°F (180-190°C).

    Fry onion rings

    Dip each onion ring into the batter, allowing excess to drip off, and carefully place into hot oil. Fry until golden brown, 2-3 minutes per side. Remove to a rack to drain. Repeat with extra rings if desired.

Bacon, cheese, onion prep

    Crisp bacon

    Crisp the bacon in a skillet over medium heat or in the oven until deep amber and crisp. Drain on paper towels.

    Prepare cheese and onions

    Crumble the Point Reyes blue cheese and thinly slice the red onion.

    Toast bun

    Toast the egg bun until lightly golden.

Assembly

    Apply sauce and layer

    Spread BBQ sauce on the bottom half of the bun. Layer red onion slices, dill pickle slices, then blue cheese crumbles.

    Add bacon and onion ring

    Top with crisp bacon and place a single beer-battered onion ring on top.

    Finish and serve

    Cap with the top bun and serve immediately.
