Batter preparation and onion rings

Prep onion rings
Trim and peel the large onion, cut into about 1/2-inch thick rings, and separate into individual rings. Reserve a few rings for frying if desired.

Make batter
In a large bowl, whisk together flour, cornstarch, baking powder, paprika, garlic powder, salt, and pepper.

Add beer to batter
Pour in cold beer gradually, whisking until the batter is smooth and lump-free. Let rest 10 minutes.

Heat oil
Fill a heavy-bottomed pot or fryer with oil to a depth of about 2 inches and heat to 360-375°F (180-190°C).

Fry onion rings
Dip each onion ring into the batter, allowing excess to drip off, and carefully place into hot oil. Fry until golden brown, 2-3 minutes per side. Remove to a rack to drain. Repeat with extra rings if desired.

Top with crisp bacon and place a single beer-battered onion ring on top.
