BURGERS

  1. 1

In a large mixing bowl, combine the ground turkey, fine breadcrumbs, finely chopped onion, garlic powder, smoked paprika, salt, and black pepper. Mix gently with your hands until just combined.

  2. 2

Add the egg to the turkey mixture and mix until the binder is evenly distributed. Avoid overworking to keep patties tender.

  3. 3

Divide the mixture into four equal portions and shape each into a patty about 3/4 inch thick. Place on a plate.

  4. 4

Chill the patties in the refrigerator for 15 minutes to help them hold together during cooking.

  5. 5

Heat a skillet over medium heat and add olive oil. When the oil shimmers, add the patties and cook for about 4-5 minutes per side, or until an internal temperature of 165°F (74°C) is reached and the patties are nicely browned.

  6. 6

Remove patties from heat and let them rest for 3-5 minutes. Optional: toast buns in the skillet briefly if desired.

  7. 7

Assemble into burgers with your choice of buns, toppings, and condiments.
