Prep the toppings: Open the pico de gallo and scoop into a bowl if needed; slice the avocados into 8-12 thin fan-shaped slices and set aside. Arrange jalapeño slices for topping.

Form the burgers: Gently shape the ground beef into four equal patties about 3/4 inch thick. Season each side with salt and pepper.

Cook the patties: Heat a skillet over medium-high heat and add neutral oil. Once shimmering, add patties. Cook about 3-4 minutes per side for medium, turning once. In the last minute, place a slice of Monterey Jack cheese on each patty and cover briefly to melt.

Assemble: Spread mayonnaise on the bottom buns. Place a cheese-topped patty on each bottom bun. Layer avocado slices, then a heaping spoon of pico de gallo. Add a few pickled jalapeño slices. Cap with the top bun.
