    In a large pot, heat the olive oil over medium heat until shimmering. Add the onion and sauté until translucent and soft, about 5-7 minutes.

    Add the garlic and sauté for 30-60 seconds until fragrant.

    Stir in the chipotle peppers in adobo sauce, ground cumin, smoked paprika, and chili powder. Cook for 1-2 minutes to bloom the spices and deepen the aromas.

    Pour in the crushed tomatoes, vegetable broth, and water. Bring to a simmer, then reduce heat and simmer gently for 15-20 minutes to meld the flavors.

    Use an immersion blender to puree the soup until smooth to your preferred texture, or leave it slightly chunky.

    Stir in the heavy cream (if using) and lime juice. Season with salt and black pepper; taste and adjust seasoning as needed. Simmer 2-3 minutes to heat through.

    Ladle into bowls and garnish with chopped cilantro. Serve hot.
