Prepare cornstarch slurry
Whisk 2 tbsp cornstarch with 1/4 cup of the organic whole milk until smooth.

Warm dairy
In a heavy-bottom saucepan, combine the remaining milk (1 3/4 cups), heavy cream (1 cup), sugar (0.75 cup), and sea salt (0.25 tsp). Warm over medium-low heat until just steaming.

Thicken custard
Slowly whisk in the cornstarch slurry. Increase heat to medium and cook, whisking constantly, until the mixture thickens and coats the back of a spoon (about 4–6 minutes).

Finish custard
Remove from heat and whisk in vanilla extract (2 tsp). If using xanthan gum, sprinkle 0.25 tsp over the surface and whisk vigorously to incorporate.

Chill base
Strain the base through a fine-mesh sieve into a clean container. Cool briefly, then refrigerate for at least 4 hours or overnight until completely cold.

Churn and serve
Churn the cold base in an ice cream maker according to manufacturer instructions until it reaches soft-serve consistency (about 15–25 minutes). Serve immediately as soft serve, or freeze 20–30 minutes to firm slightly.
