In a high-speed blender, combine 1 cup frozen banana slices with 2 cups unsweetened oat milk. Blend on high until smooth and creamy, with no banana chunks.

Add 2 tablespoons pure maple syrup, 1 teaspoon vanilla extract, and 0.25 teaspoon salt. Blend on low for 10-15 seconds to incorporate.

If you have an ice cream maker, pour the mixture into the machine and churn for 20-25 minutes until thick and fluffy and resembling soft-serve.

If you don't have an ice cream maker, transfer the mixture to a freezer-safe container and freeze for 2-3 hours, whisking vigorously every 30 minutes to break up ice crystals for a creamy texture.

Serve immediately as soft-serve scoops. If storing for later, keep frozen and let sit for 5-10 minutes at room temperature to soften before scooping.
