Peanut Butter Filling
Method
Method
- 1
Line a 12-cup muffin tin with paper liners.
- 2
Place 2 cups semi-sweet chocolate chips in a microwave-safe bowl or a heatproof bowl set over simmering water and melt until smooth, stirring occasionally. You should have about 2 cups of melted chocolate.
- 3
Spoon a small base layer of melted chocolate into each liner to form the bottom, using about 1/3 to 1/2 of the melted chocolate total. Gently tap the tin to level the bottoms, then refrigerate for 8–12 minutes until the shells are set.
- 4
In a separate bowl, mix the peanut butter, powdered sugar, melted butter, vanilla extract, and salt until completely smooth and thick.
- 5
Spoon about 1 teaspoon to 1/2 tablespoon of peanut butter filling into the center of each chocolate shell, leaving room for a top layer. If you prefer more filling, you can use up to 1 tablespoon per cup.
- 6
Cover the peanut butter filling with the remaining melted chocolate, sealing the edges to enclose the center. Smooth the tops.
- 7
Refrigerate the tray for 20–30 minutes, or until the chocolate is fully set. Remove the cups from liners and store in a cool place or refrigerate until ready to serve.
