Prep and preheat
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat. Pat the chicken tenders dry with paper towels and set aside.

Dredging stations setup
In a large shallow bowl, whisk together the flour, 1 tsp salt, 0.5 tsp black pepper, paprika, garlic powder, onion powder, and cayenne (if using). In a separate bowl, whisk together buttermilk and eggs until well combined.

Parmesan breadcrumb mix
In another shallow dish, combine breadcrumbs with grated Parmesan cheese and a pinch of salt and pepper.

Coat the chicken
Dip each chicken tender first into the seasoned flour, letting any excess shake off. Then dip into the buttermilk-egg wash, letting excess drip off. Finally dredge in the Parmesan breadcrumb mixture, pressing gently to adhere.

Arrange and oil
Place coated tenders on the prepared baking sheet in a single layer. Lightly brush or spray with vegetable oil to help with browning.

Bake until golden
Bake for 15–20 minutes, flipping once halfway through, until the tenders are golden brown and reach an internal temperature of 165°F (74°C). If needed, switch to broil for 1–2 minutes for extra crispness, watching closely.
