    In a bowl, whisk together flour, cocoa powder, baking soda, and salt until well combined.

    In a separate bowl, beat the 0.5 cup butter with 1 cup granulated sugar on medium speed until light and fluffy, about 2-3 minutes.

    Beat in the egg and 1 tsp vanilla extract until fully incorporated.

    Gradually add the dry ingredients to the butter mixture, mixing until a smooth dough forms.

    Flatten dough into a disk, wrap in plastic, and chill at least 60 minutes for easier rolling.

    Roll the dough to about 1/8 inch thickness between parchment sheets. Cut rounds using a cookie cutter or a small cup. Place on parchment-lined trays and bake at 350°F (175°C) for 8-10 minutes until set. Cool completely on a wire rack.

    In a medium bowl, beat the 0.5 cup butter until creamy. Gradually add powdered sugar, mixing on low until combined.

    Pour in 2 tablespoons milk and 0.5 tsp vanilla extract, and beat on medium-high speed until filling is light and fluffy.

Assemble cookies

    Sandwich the cookies

    Pair up the cooled cookies. Pipe or dollop a generous amount of filling onto the flat side of one cookie and sandwich with another cookie. Repeat until all cookies are filled.

    Chill to set

    Place assembled cookies on a tray and chill in the fridge for 15-20 minutes to set the filling.
