    Make garlic mayo

    In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth. Refrigerate until ready to assemble.

    Prepare crispy onion topping

    In a shallow bowl combine flour and cornstarch. Toss thinly sliced onions in the mixture to lightly coat. Heat vegetable oil in a deep skillet to about 350°F (175°C). Fry onions in batches until crispy and golden. Remove and drain on paper towels.

    Season and form beef patties

    Season the four beef portions with salt and pepper. Gently form into four evenly sized patties, about ¾ inch thick, making a slight indentation in the center for even cooking.

    Toast buns

    Slice buns and brush lightly with a bit of oil or melted butter. Toast on a hot skillet or grill until lightly golden.

    Cook patties and melt cheese

    Cook patties on a hot grill or skillet over medium-high heat, about 3-4 minutes per side for medium. In the last minute, place a cheese slice on each patty and let it melt.

    Assemble the onion burgers

    Spread garlic mayo on the cut sides of the buns. Place lettuce on the bottom bun, add a cheesy patty, top with crispy onion, pickle slices, and the top bun.
