Mochi Dough

    Combine dry mix and water

    In a microwave-safe bowl, whisk together the glutinous rice flour and sugar until evenly combined. Slowly whisk in water until the batter is smooth with no lumps.

    Cook the mochi base

    Microwave the mixture on high for 1 minute, stir. Continue microwaving in 30-second bursts, stirring between, until the dough becomes glossy and translucent (about 2–3 minutes total).

Shaping and Filling

    Prepare surface and dough

    Dust a clean work surface with 1/4 cup cornstarch and set a sheet of parchment nearby.

    Divide and fill (optional)

    Divide the mochi dough into 8 equal pieces. If using filling, flatten each piece into a disk, place about 1 teaspoon of red bean paste in the center, and wrap dough around to seal.

    Shape mochi

    Gently roll each dough ball between your palms to form smooth, round mochis.

Coating and Storage

    Coat

    Roll each mochi in kinako powder for flavor and color, or keep plain and just dust with additional cornstarch.

    Serve immediately or store in an airtight container with a thin layer of parchment between layers for up to 2 days.
