SOFT SERVE BASE

Method

SOFT SERVE BASE

  1. 1

In a medium saucepan over medium heat, whisk together the milk, heavy cream, sugar, salt, and cornstarch. Heat gently until the mixture is warm and the sugar is dissolved, whisking often.

  2. 2

Whisk a small amount of the warm base into the cornstarch to create a slurry, then whisk the slurry back into the saucepan until smooth.

  3. 3

Remove from heat. Stir in peppermint extract, vanilla extract, and green food coloring (if using). Let the mixture cool slightly.

  4. 4

Chill the base in the refrigerator until completely cold, at least 2 hours.

MINT CHOCOLATE PIECES MIX-INS

  1. 5

While the base chills, crush chocolate sandwich cookies into small pieces until you have about 1 cup; measure 1/2 cup mini mint chocolate chips.

  2. 6

Store mix-ins refrigerated until ready to add.

SOFT SERVE ASSEMBLY

  1. 7

Churn the cold base in an ice cream maker according to the manufacturer's instructions, until it reaches soft-serve consistency.

  2. 8

In the last minute of churning, gently fold in the crushed cookies and mint chocolate chips.

  3. 9

Serve immediately as soft serve in cups or cones. If a firmer texture is desired, freeze for 15-30 minutes before serving.
