Prepare the ice cream base

In a medium saucepan, whisk together the heavy cream, whole milk, granulated sugar, and salt. Heat over medium heat until the mixture is steaming and the sugar has dissolved, but do not let it boil.

Remove from heat and whisk in the vanilla extract and peppermint extract. If using, add 1–2 drops of green food coloring to achieve a pale mint color.
Chill the base

Allow the mixture to cool to room temperature, then cover and refrigerate for 2–4 hours (best overnight) until completely cold.
Churn and add mix-ins

Pour the chilled base into your ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

With the machine running, add the mini chocolate chips and churn for another 1–2 minutes to evenly distribute them.
Freeze
