1. Chill and prepare
Fill a rocks glass with 1 cup of ice to chill the glass and keep the drink cold from the start.
2. Mix the cocktail base
In a cocktail shaker, combine 25 ml tequila, 15 ml fresh lime juice, 15 ml orange liqueur, and 10 ml simple syrup. Add a handful of ice and shake vigorously for 6-8 seconds until well chilled.
3. Strain into the glass
Discard the shaker ice and strain the shaken mixture into the iced rocks glass, keeping the ice in the glass.
4. Add fizz and balance
Top the drink with 90 ml Prosecco and 40 ml sparkling water. Give a gentle stir to combine all components without losing too much carbonation.
5. Garnish and serve
Garnish with a lime wheel on the rim and serve immediately.
