    Season the fish

    Pat the mahi mahi dry and rub all over with the asado seasoning and olive oil. Let sit 15 minutes to bloom the flavors.

    Make slaw

    In a large bowl, toss shredded cabbage, cilantro, orange segments, jalapeño, lime juice, and salt. Set aside to let flavors meld.

    Grill the fish

    Preheat a grill pan or heavy skillet over medium-high heat. When hot, grill the mahi mahi about 3-4 minutes per side until opaque and just cooked through. Remove and let rest 2 minutes.

    Warm tortillas

    Quickly warm the corn tortillas on the grill or in a dry skillet, about 15-20 seconds per side.

    Assemble tacos

    Divide the fish among the warmed tortillas. Top with slaw, jalapeño slices, orange segments, and a drizzle of crema. Finish with an extra squeeze of lime if desired.
