    Char the jalapeño pepper over direct heat until blistered on all sides. Let cool, remove seeds if desired, then finely chop and whisk into the mayonnaise to make a jalapeño mayo.

    Toast the egg bun halves on the cut side until lightly golden and fragrant.

    Rinse and dry the lettuce leaves; keep whole for layering.

    Peel and thinly slice the red onion into rings or half-moons.

    Grill the Anaheim chile until blistered on the skin, then peel, deseed, and slice into strips.

    Season the beef patty generously with kosher salt and black pepper on both sides.

    Grill the patty over medium-high heat to your preferred doneness (about 3–4 minutes per side for medium). In the last 1–2 minutes, place Jack cheese slices on top to melt.

Assemble & Serve

    Spread a layer of jalapeño mayo on the cut side of the bottom bun.

    Layer with lettuce, the cheese-topped patty, grilled Anaheim chile, and red onion. Drizzle or dollop the salsa verde over the patties if desired.

    Top with the toasted bun crown, press gently to compact, and serve immediately.
