Combine and simmer
In a medium saucepan, combine cherries, granulated sugar, 0.25 cup water, and lemon juice. Bring to a gentle simmer over medium heat, stirring occasionally until the cherries soften and release juices, about 6–8 minutes.

Prepare cornstarch slurry
In a small bowl, whisk together cornstarch and 2 tablespoons cold water until completely smooth.

Thicken the cherry mix
Pour the cornstarch slurry into the simmering cherry mixture. Stir constantly and cook for 1–2 minutes, or until the sauce thickens to a glossy, nappe-like consistency.

Remove from heat. Stir in vanilla extract and salt. Allow the sauce to cool slightly.

Transfer to a clean jar or container and refrigerate for at least 30 minutes to meld flavors and thicken further.
