    Gather and plan

    Set up your ice cream maker, a large bowl for chilling, a whisk, a fine-mesh sieve, and a spatula. Crush about 16 Oreo cookies into fine crumbs (roughly 2 cups) to use as the base crumb, and reserve the remaining 8 cookies for chunks.

Make Custard Base

    Heat dairy

    In a medium saucepan, combine heavy cream, whole milk, and half of the sugar. Heat over medium heat until the mixture is hot and steaming, but not simmering.

    Whisk yolks

    In a separate bowl, whisk the egg yolks with the remaining sugar until pale.

    Temper

    Slowly pour about a third of the hot dairy into the yolks while whisking constantly to temper. Then whisk the yolk mixture back into the saucepan with the rest of the hot dairy.

    Cook

    Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon (nappe) and reaches about 170-175°F (77-79°C). Do not boil.

    Strain and chill

    Strain the custard through a fine-mesh sieve into a clean bowl. Stir in vanilla and salt. Cool to room temperature, then refrigerate for at least 4 hours or until completely cold.

Churn and Fold Oreos

    Churn

    Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions, typically 20-25 minutes, until it resembles soft-serve.

    Prepare add-ins

    Meanwhile, crumble 16 Oreo cookies into fine crumbs (about 2 cups) and chop the remaining 8 cookies into small chunks.

    Add cookies

    With the ice cream still soft, add the Oreo crumbs and chunks. Fold gently until evenly distributed.

    Freeze

    Transfer to a lidded container and freeze for at least 4 hours, or until firm.
