SOFT SERVE

Method

SOFT SERVE

  1. 1

    Step 1

In a medium saucepan, whisk together the whole milk (2 cups), heavy cream (1 cup), granulated sugar (0.75 cups), and fine sea salt (0.5 tsp). Heat over medium heat until the mixture is steaming and the sugar is fully dissolved, about 5–7 minutes. Do not let it boil.

  2. 2

    Step 2

Remove from heat and whisk in the vanilla extract (1 tablespoon). Allow the mixture to cool for about 10 minutes.

  3. 3

    Step 3

Chill the base in the refrigerator until very cold, at least 4 hours or overnight for best results.

  4. 4

    Step 4

Churn in an ice cream maker according to the manufacturer's instructions, until the mixture reaches a soft-serve consistency, about 20–25 minutes.

  5. 5

    Step 5

Serve immediately for soft-serve in bowls or cones, or transfer to a freezer-safe container and freeze about 2–4 hours for a firmer texture.
